Yummy Sweet Potato Ideas

I think this could be made nightshade free!



I remember sitting in my Granny and Papa's kitchen and smelling onions, potatoes and okra frying in a skillet. I can still smell the fragrance all these years later.

Today I found something that might just work to create a similar dish to that one that is so familiar, but now inedible.

Ingredients

1 small sweet potato
2 onions
1 package bacon
Salt
Pepper
Minced garlic

Dice a small sweet potato, a couple of onions and add a package of bacon.  Place the diced sweet potatoes in a skillet heated over medium heat. Cook for five minutes. Add the bacon so all that lovely bacony goodness will saturate the potatoes. Add salt, pepper and minced garlic. Cook until the bacon starts to curl and then add the onion. Cook until all ingredients are done.

Variation:

Bake the whole sweet potatoes in an oven. Cook the onions and bacon. Use the bacon and onion mixture as a topping for your sweet potatoes. Add cheese.

Nighshade Free Asian Stir Fry with Bragg Aminos


Cooking nightshade free can be challenging, but tonight I scored big with my newest stir fry. Here is the recipe. It yields a large amount and fed a family of five, three of which are teenagers. Ingredients

1 large yellow onion
Extra virgin olive oil
Salt
2 packages extra firm tofu
Minced garlic
Toasted sesame seeds
Wasabi powder
Black pepper
Braggs aminos
1 package frozen green beans
Rice noodles

Dice one large yellow onion and place in a heated skillet. Add 3 tablespoons of extra virgin olive oil and sprinkle with salt. Carmelize onions over medium high heat.

Dice two packages of extra firm tofu into small cubes. Set aside.

Place the tofu into the heated skillet and carefully mix with the onions. Add minced garlic to your taste, toasted sesame seeds, and an 1/8 teaspoon of wasabi powder. Sprinkle with black pepper and stir well.

Squirt Braggs aminos over the top of the stri fry mix, and cover. Let the stir fry cook over medium heat for five minutes.

Add the thawed green beans to the stir fry and cover. Let the mix cook for 10 minutes.

Prepare the rice noodles according to the package directions and drain. Set the noodles aside.

Divide the rice noodles into servings and serve the stir fry mix over the noodles. Add more Braggs aminos if desired.
